I think I found the best cheese cake in town. It took me five years of tasting, exploring, dining out and taking pictures, but I made it. It’s Sweet Tooth Cafe‘s chocolate cheesecake. Yum. It’s creamy, indulgent, rich and soft. And I went to the small cafe to meet the mastermind behind it – Mei, from Sydney, who got to Beijing almost 10 years ago, and has been baking delicious cakes since.

我认为我找到了全北京最好吃的芝士蛋糕。我足足花了五年的时间来不停地试吃,发掘,品尝,拍照,但我终于找到了。那就是Sweet Tooth Café的巧克力芝士蛋糕。美味极了。它奶油味十足,口感丝滑又柔软。我在这家精致小巧的咖啡店见到了Sweet Tooth的幕后英雄 – Mei,她来自悉尼,大概十年前搬到了北京,从此开始了她的美味蛋糕烘焙之旅。

With a contagious smile, Mei told me more about her Beijing adventure, and how she is determined to make Beijing a better place by serving comfortable food in a no-frills environment. As we talked more and more, I got to know how this inseparable duo, Mei + her partner George, is working really hard to make the cake magic happen every day.

带着她充满感染力的微笑,Mei给我讲述了她的北京奇遇,她是如何下定决心把好吃的甜点带到北京这个略显粗糙的城市,让它变成一个更精致的地方。随着我们交流的深入,我渐渐了解了这对形影不离的情侣,Mei和George,是如何通过自己日复一日的努力工作,把蛋糕的魅力展现给大家。

Are you a Sweet Tooth?

I definitely have a big sweet tooth. I am a big foodie in general. I guess I got this aspect of my personality from my mum – she has the biggest sweet tooth I know. A lot of our customers ask if I get sick of being completely surrounded with desserts, but honestly I still have regular cravings. The best part about having Sweet Tooth is that I can easily satisfy these cravings.

你喜欢吃甜食吗?

绝对是啊。总体来说我是个美食控。我觉得这一点遗传自我的母亲 --她是我所知道的最喜欢吃甜食的人。很多顾客都好奇,我每天被甜点所包围会不会有所厌倦,但老实说,我时不时还会馋得不得了呢。拥有Sweet Tooth最好的一点就是我可以很容易满足对甜食的渴望。

How did you end up in Beijing?

It was my dad who actually encouraged me to come to Beijing to learn the language and experience the culture. He saw the abundance of opportunities here so after I graduated university around 10 years ago I got on the plane and I’ve been here ever since. I found an interesting environment and the possibility to make my dream come true.

是什么把你带来北京?

其实是我的父亲鼓励我来北京学习语言和体验文化。他看到这里无穷的机遇,于是十年前刚大学毕业的我就坐上飞机来到了这里,并且再也没有离开过。我找到了一个有趣的环境和机会来实现自己的梦想。

What started as a made-to-order online business ended up being a cafe in the heart of Beijing. How did the relationship with your customers change when you opened the shop?

Having a physical location has changed our relationship with our customers dramatically. We originally started as an online business but it was only George, my partner, who met our customers as he was our delivery guy. I could never really put a name to a face, so it did limit the extent of developing a better relationship with our customers. Now that we have a store front we have the time to develop a more personal relationship with all our customers. We get to know them on a first name basis and even hang out with them when we can find the time. It’s exciting!

一开始你做线上订做糕点,是什么让你决定把它转换为北京核心区的一家咖啡馆?当你开始经营这家咖啡馆时,你和顾客的关系有什么变化吗?

拥有一家实体店完全改变了我和顾客的关系。当我们只做线上点餐时,只有George能见到我们的顾客,因为他负责送外卖。我不能把顾客的名字和他们的面孔联系起来,所以这其实限制了我进一步更好地发展和顾客的关系。现在我们有了实体店,这方便于我们和顾客有更亲密的接触。我们可以第一时间就了解顾客,甚至当我有时间时,还可以和顾客一起出去玩。这令人兴奋极了.

What’s your favourite cake?

Cheesecakes, hands down are my favourite. I’m obsessed with cheesecakes. I love them so much I have a category dedicated just to cheesecakes.

你最爱的甜点是什么?

芝士蛋糕,这绝对是我的最爱。我对芝士蛋糕简直上瘾了。我爱极了芝士蛋糕,以至于我有专门一类甜点都是关于芝士蛋糕的。

Is there any other bakery in the world you look at for inspiration?

Honestly that is a tough question because I think I get inspired in so many ways. Although,= I have to say I really love this place called Planet Cake back home [in Sydney, Australia]. They specialise in customised fondant cakes. A few years ago, I took a few of the cooking classes they host to get a feel of it. What they do is just beyond amazing.

你有没有从世界上的哪些甜品店寻找灵感?

老实说,这个问题很难哦,因为我觉得我有很多种方式获得灵感。虽然,我必须要提在我家乡(澳大利亚的悉尼)的Planet Cake。那里的特色是量身定做的翻糖蛋糕。几年前,我参加了他家举办的烹饪课。他们真的是太棒了。

What’s your dream for the future?

I would really love to expand Sweet Tooth and build up on the whole café. It would be amazing if we could open up more locations around Beijing. Also, offering custom made fondant cakes is something I’ve been itching to do. I want everyone to think Sweet Tooth when they want to satisfy their sweet and savoury tooth!

你未来的梦想是什么?

我希望可以开更多家分店并扩大Sweet Tooth的规模。如果能在北京开更多的分店就太好了。还有我一直想做量身定制的翻糖蛋糕。我的梦想就是当大家想吃甜品时,她们就会想到Sweet Tooth

What’s the most versatile ingredient for cakes, and why?

Chocolate! It is absolutely amazing what you can do with this one ingredient. You can use it to make a range of desserts from cakes to mousse to truffles, create frostings and use them for decorations. The sky is the limit when it comes to chocolate.

对于蛋糕来说,最实用的配料是什么,为什么呢?

巧克力!这种配料能带给你太多的惊喜了。你可以用它做各种各样的甜点 – 蛋糕,慕斯或者松露,也可以用它做糕点上的糖霜,或者别的装饰。巧克力的用途真的太多了。

You already know how I’m always inspired by talented people who work hard to realise their dreams. And Mei is definitely one of them. She started Sweet Tooth with a mission to introduce and share new taste experiences with Beijing’s multicultural crowd.

They only use the best local and imported ingredients, and George and Mei are always at the cafe, ready to welcome you with a warm smile and, why not, a slice of fantastic cheese cake.

她们只采用当地或进口的最好食材,George和Mei总是在咖啡馆,面带微笑等待你的到来,哦对了,除了他们,等待你的还有一块美味极了的芝士蛋糕。

Il cheesecake e’ decisamente una delle mie torte preferite, e Mei, australiana di Sydney, ha perfezionato la sua ricetta in anni ed anni di tentativi – il risultato e’ una torta buonissima, ricca, una vera delizia. Ma Mei non si accontenta. Da un paio d’anni ha aperto un piccolo bar e, insieme al sup partner George, ogni giorno offre ai visitatori panini, crepes, insalate e caffe’. Perché, lei dice, la sua missione e’ imporsi come punto di riferimento per i foodies di Pechino. In bocca al lupo!
