DARE TO BE DIFFERENT. A LITTLE OR A LOT. IT DOESN’T MATTER. JUST DIFFERENT.
My favourite pizza has always been ‘vegetarian’ – a simple margherita (tomato + mozzarella) with grilled vegetables – or fried, on my birthday or when I was in a very good mood. That is, until I discovered the Pesto Chicken pizza at Gung Ho. That day marked the beginning of my new pizza life. And since then nothing has been the same.
I’m not joking when I say that that pizza, tasted for the first time at a friend’s place one evening last spring, opened my eyes on a different kind of food-related business model. The guys at Gung Ho shake up the pizza business in Beijing thanks to great service, a perfectly-trained team, hip and warm interior design in their outlets and non-conventional pizza.
And I know that this can’t be only magic – I could guess there was lot of work behind this formula. Co-founder John O’Loghlen and I discussed about this over breakfast last weekend.
Having the best people on board is key to your business. How do you make sure you get hold of them?
During our recruitment process we don’t really look at titles & diplomas, but we like to check references thoroughly and make sure candidates have that Gung Ho! attitude that is so important to us. It is “Go! Go! Go!”; it’s a can-do, go out and get ‘em state of mind. Once they are onboard, we organise development programs and as a company we take immense pride in the fact that we promote almost exclusively from within. At the same time we make sure that as well as working hard, they do play hard! We let them make time for themselves and their families and friends, we want to see them happy and we focus on their wellbeing.
How did the Gung Ho adventure start?
Let me just tell you that we launched Gung Ho in 2010 with a big party at the rooftop of the Opposite House in Beijing. All our distinguished guests received an invitation card that looked somehow like it was coming from the Italian Embassy and they were all expecting Italian pizza. In fact they got a different kind of pizza, wholewheat flour and healthy & gourmet toppings – then it was spinach and tofu and Beijing duck pizza. Today, it is Australian lamb, for example. But what we were launching was more then this – we wanted to shake up the delivery system in Beijing thanks to our commitment to great service.
Who are the members of Gung Ho! founding team?
It’s the Gung Ho! Bros. – Jade Gray and I – and Lucy. Lucy is still in Beijing, while Jade and I travel back and forth from Australia several times every quarter. But our brand is Beijing-based and independent from our actual presence here. Of course, we talk every single day – we have Skype meetings and structured meeting schedules, but our team members are perfectly capable of running the operations by themselves. On the other end, when I’m here I’m very present for both our team and customers – I do follow-up with our store managers and go out as a delivery boy on the frontline. At the end of the day, I miss Gung Ho people – our team and customers – the most when I’m in Australia.
It all started as a delivery business…
Yes exactly. Because there was not a reliable option back in 2010. We created a system where pink-wearing road warriors ride their motorbikes and knock at your door with a hot pizza and put a smile on your face. This is how people know us. But we have to be up-to-date and constantly innovate ourselves. Now we also have two leading internet companies doing deliveries for us – it’s important to understand what customers want and how to be able to reach out to as many people as possible. It’s also exciting to investigate new options while also holding on to our own delivery platform!
…and now so much attention is paid to the interior design in your two restaurants.
It couldn’t have been any other way. A nice woking environment is important for our team members, and a hip, warm interior design is something our guests appreciate. And it’s even more than this – we renovated all of our stores between 2014 and 2015 and made sure everything was done in a sustainable way. We are aware at present there is no such thing as a truly sustainable business as everything we do will have some impact on the environment – but we hope to significantly reduce that impact and inspire others to do so, one step at a time.
Pink is the new green, isn’t it?
When we had to choose a corporate color we had no doubts – we wanted it to pop in people’s eyes! And we believe pink does the trick as it perfectly represents the Gung Ho attitude! But we also love green [John is in fact wearing a very green sweater today!] and we work day and night to make Gung Ho a sustainable business by “meeting the needs of the present world without compromising the ability of the future generations to meet their own” (as per definition of ‘sustainable business’ by United Nations). We sort & recycle our rubbish since January 2013, print our menu on recycled paper since March 2013 and use recycled pizza boxes since September 2013.
In 15 years time, where will Gung Ho be?
We’ll still be here, serving gourmet pizzas and craft beer. The long term plan is to change people’s lives for the better – of all the people that are involved with Gung Ho. Our clients, with tasty pizza and great service, our team members, with training and talent development, and the environment, with an ad hoc comprehensive sustainability plan. In 15 years we’d love to be a ‘little giant’, that Chinese companies have aspired to be like and be able to leave a footprint in Beijing and all over China.
I really hope more and more companies are ready to follow Gung Ho foot steps – Beijing needs more and more conscious and committed stakeholders in its panorama – and food options are never enough!
Go! Go! Go!
For the interview with John O’Loghlen I was delighted to wear:
The picture of the two of us together was taken with my iPhone.
For all the other pictures special thanks to Gung Ho.
